Friends, it’s my favorite time of the year: Thanksgiving. As someone who creates recipes for a living, there is absolutely nothing that I love more than bringing people together over food. It’s why I’ve devoted the past several years to creating recipes and community that brings people together, and I can’t believe there is a community of over 1 million Kalejunkie readers now!

There’s something so special about being able to make food from scratch and share it with the ones that you love, which is why I love creating simple and healthy Thanksgiving recipes that you can share with your family. This side dish is not only perfect for serving alongside your favorite turkey, but it also comes together in 30 minutes (and can be prepped ahead of time). Which means that you can spend less time in the kitchen and more time with your family. What could be better than that?

And for the ultimate Thanksgiving meal (KJ style, of course), I recommend pairing these carrots alongside my Cinnamon Bourbon Cranberry Sauce, my Vegan Stuffing, or my Creamy Green Bean Casserole. Yum!

What You Need to Make This Bright & Flavorful Vegetarian Side Dish

  • Carrots: Carrots are the star of this dish! I recommend using baby carrots, however you CAN also use regular carrots! I just recommend chopping them in half to make them easier to cook and eat. See my notes in the recipe card for full instructions on this!
  • Olive Oil: Olive oil is full of healthy fats and adds a delicious flavor to these carrots!
  • Honey: Honey adds the perfect amount of sweetness to these carrots, without the refined sugars, and without making them too sweet.
  • Spice Blend: To perfectly season these carrots, we’ll be using a blend of sea salt, ground black pepper, Aleppo pepper, cumin, paprika, and cinnamon. Yum!
  • Feta Cheese: I always recommend using traditional greek feta that is packaged in brine, in a block, rather than pre-crumbled feta cheese, as it has the best flavor.l
  • Greek Yogurt: Greek yogurt is not only thick and creamy, but it’s packed with protein, making the whipped feta both healthy and delicious.
  • Lemon: You’ll need the juice of approximately one lemon (3 tablespoons) to add the perfect balance of acidity to the whipped feta!
  • Garlic: Fresh garlic cloves add the best flavor to the whipped feta! I highly recommend them, here.
  • Garnishes: These are optional, but I love adding these garnishes on top of the carrots and whipped feta to bring even more flavor to them! I recommend garnishing these carrots with some chopped parsley, olive oil, more Aleppo pepper, or pomegranate arils.

Next, line the spiced carrots up on a parchment paper-lined baking sheet and bake them in the oven at 400 F for 20-25 minutes, until they’re fork tender.

How to Make This Perfect Thanksgiving Day Side Dish

To make these carrots, start by preheating your oven to 400 F. Next, wash the carrots (and cut them, if desired), being sure to remove the stems. Add them to a large bowl, alongside the olive oil, honey, and all of the seasonings: the Aleppo pepper, cumin, paprika, cinnamon, sea salt, and black pepper. Use your hands to toss the carrots and fully coat them in the seasoning blend. Line a baking sheet with parchment paper and transfer the carrots to the baking sheet, making sure they are spread out evenly. Roast the carrots for 20-25 minutes, until they are fork tender. At the halfway point, remove the tray from the oven and toss the carrots to ensure that they cook evenly.

While the carrots are in the oven, prepare the whipped feta by adding the feta cheese, greek yogurt, lemon juice, olive oil, and garlic to a food processor and processing them until the feta reaches a smooth and creamy texture. If you prefer a thinner consistency to the feta, you can add in a few tablespoons of water and re-process until the feta reaches your desired consistency.

Once the whipped feta is done, spread it across a plate. Then, once the carrots are done, remove them from the oven and add them on top of the whipped feta. Garnish the carrots with some chopped fresh parsley, a drizzle of olive oil, more Aleppo pepper, or pomegranate arils, if desired. Then, serve and enjoy!

How to Prepare This Dish Ahead of Time

Let’s be honest: Thanksgiving Day is a busy day in the kitchen, which means that any recipe you can prepare ahead of time will make your life much easier. Luckily, this is one of those recipes that is super easy to prepare ahead of the big day!

To prepare these carrots ahead of time, prepare the carrots and whipped feta according to the instructions above. Then, store them separately in airtight containers, in the fridge, until you’re ready to serve them. Then, to reheat the carrots, line them up on a parchment-lined baking sheet and bake them in the oven at 250 F for 10-15 minutes. Then, follow the plating instructions above, serve, and enjoy!

  1. These carrots!!! These are definitely going to be a staple in my home for years to come. I made them for a Friendsgiving and they were a HIT. They were so EASY, DELICIOUS, and those pomegranate seeds really made them look so beautiful and seasonal. Thanks Nicole for this gift of a recipe! 🙂

  2. This was so incredibly tasty. I added rotisserie chicken on top and made it a whole dinner, and it was probably the best thing we ate all week. Don’t skip the pomegranate arils, they add a nice pop of flavor!

I made these carrots for thanksgiving dinner and they came out amazing! I used baby carrots instead of the big ones and would definitely make them again.

  4. These carrots were amazing! It gave a little spice to them so they weren’t boring and with the whipped feta super yummy. I had leftovers plain and they were just as good!

I was looking to change up our Thanksgiving menu this year made these carrots and my whole family enjoyed! I got many compliments afterwards how delicious they were. I love feta but some members of my family don’t. They even enjoyed! Win! Thank you for your thoughtfully created recipes.

  6. These are amazing! At first my husband was unsure because the whipped feta packed quite a punch (in a good way!), but the combo with the carrots and pomegranate arils was perfection. I make so many of your recipes I told him to keep the faith! He even talked about wanting to use the whipped feta with other things or simply just dipping crackers in!

WOW! These were the star of our table. The flavors are incredible and the whipped feta had my husband licking the bowl. I’ve already made this 3 times for various dinner parties and it is always the favorite!

    • Woohoo! I am thrilled to hear that, Laura! Thank you so much for making this recipe and for leaving such a kind review!

Made this side dish for Thanksgiving this year (sit down dinner for 47) and it was so unique and delicious!! I used baby carrots due to the crowd size so it was easier to portion.

    • I’m so happy that you enjoyed this recipe, Lindsey! And baby carrots work great ☻ Thank you so much for your review!

  9. I made these carrots with whipped feta and they were delicious.
I think the recipe made too much feta for my taste but did not go to waste as it tasted good on so many other things.
Next time I serve this and I will, I would plate the carrots alone and put the whipped feta in a separate serving bowl.

Made this dish last night and it was delicious. I loved the flavors. We will be using the extra whipped feta for a Mediterranean meal as well. Thank you for sharing the recipe.

    These are delicious!
Made them for Thanksgiving this year, and everyone loved them. We spiced them a little heavier and they were perfect.

    • Woohoo! I am thrilled to hear that, Constance! Thank you for making this recipe, and for leaving such a kind review!

  12. Update to my question a couple of days ago (no response but I just went for it!) I made this with sweet potatoes instead of carrots and it was phenomenal. I was a bit worried at first as the feta dip seemed very tart for me, but it was all so balanced with the honey and spices of the sweet potatoes. I was generous with the pomegranate (and parsley), it was also just such a lovely presentation. It’s now going to be a staple for future Thanksgivings, and something I’ll plan to continue making throughout the colder months. I can’t wait to try it with carrots next time!

    • I’m so glad it turned out well for you, Rebecca!! Thank you so much for giving this recipe a shot!

This was the first Kale Junkie recipe I’ve followed. I made it for Friendsgiving and to be honest when listing our dishes nobody seemed too excited about my dish… until they tried it!! It got RAVE reviews!! And I’ll now be making it for Thanksgiving too. Now I’m excited to try more Kale Junkie recipes!

  15. I’m not sure where the honey ingredient goes that is included with the carrot section of the ingredients? Should the olive oil and honey be included in tossing the carrots with the spices. Looks like a great recipe and would like to try this out prior to upcoming Thanksgiving dinner. Thanks!

    • Thank you for pointing that out, Chris! The recipe has been updated to include those instructions ☻

Wonderful side dish! The carrots were so good, and the dip was amazing! I honestly might cut the dip in half next time, though it would be great with pretzels or raw veggies too! Delish and will make again. Thanks!

    • I am so thrilled that you enjoyed this recipe, Sarah! Thank you so much for making it, and for leaving such a kind review!
