If a crisp and refreshing margarita is calling your name, then you will love this Spicy Skinny Cucumber Margarita. Whether you’re pairing it alongside your favorite tacos, or simply enjoying it outside on a warm summer day, this margarita takes on a light and refreshing twist that is a little spicy, a little boozy, and overall delicious!

Friends, what’s your favorite, go-to cocktail? While I love the classic Aperol Spritz or a fun and slushy frosé, in my book, there’s no better cocktail than the margarita. Whether I’m out at a Mexican restaurant, at the bar with my girlfriends, or sitting at-home in my backyard after a long and productive workday, the drink that I always reach for is a margarita. I love the contrast between the tanginess of the lime juice, the crispness of the tequila, and the saltiness of the salt rim. I mean truly, is there anything better than it? This past Memorial Day, I went down to Los Angeles to visit my family and we had a Mexican-inspired meal, full of my Crispy Baked Carnitas Tacos and my Summertime Chicken nachos. To help round out the meal, I also made a batch of these Spicy Skinny Cucumber Margaritas, and my parents and sister all LOVED it.

One of the reasons why we all loved this recipe so much was because of how crisp and refreshing it is. Cucumbers have very high water content, which makes this drink way more hydrating than your traditional margarita. It’s the perfect way to balance things out, since alcohol can be dehydrating. And while I’m by no means saying that this is a hydrating drink, it IS much more hydrating than your traditional margarita, making it the perfect drink to make this summer!

Plus, this recipe yields enough for one full pitcher, or four individual drinks, which means that it’s perfect for prepping for a crowd. Or, simply store it in the fridge and enjoy it throughout the week. No matter how you choose to enjoy this cocktail recipe, there’s no way that you could get it wrong!

What You Need to Make This Salty & Spicy Margarita Recipe

  • Cucumber: Of course, this wouldn’t be a cucumber margarita without the cucumber! I recommend using a big English cucumber and slicing it nice and thin with a mandolin.
  • Jalapeño: If you love a spicy margarita, then you are going to love the addition of jalapeños in this recipe! The addition of fresh jalapeño slices truly takes things to the next level.
  • Lime Juice: Some fresh lime juice adds the perfect balance to this cocktail – don’t skip it!
  • Tequila: Pick your favorite tequila and use it in this recipe! I like using Tequila Blanco, but any tequila would work well. As always, I recommend using what you already have.
  • Cointreau: : A little cointreau is necessary for any good margarita recipe!
  • Monk Fruit Sweetener or Agave: To balance out the saltiness of the margarita, I like to add a little monk fruit sweetener or agave syrup. Either one works just as well!

How to Make This Crisp & Refreshing Summer Cocktail

To make this drink, start by preparing the glass. Rub a lime wedge alongside the edge of a margarita glass. Pour the Tajin into a small bowl. Rub the glass into the bowl until the rim of the glass is covered in the Tajin. Set it aside.

⁣Next, prepare the Cucumber Margarita. Add the cucumber and jalapeño slices to the bottom of a pitcher and muddle them well. Then, add the fresh lime juice, Tequila, Cointreau, and monk fruit sweetener or agave to the pitcher. Stir the ingredients well, to fully combine, then add in the ice.

Strain the margarita mixture and divide it amongst four glasses. Garnish with a fresh lime wedge, then serve and enjoy!

“Skinny” just means we’re skipping the sugary margarita mixers. Instead, this drink gets its sweetness from monk fruit sweetener or agave syrup, which are both refined sugar-free.

Can I make this margarita ahead of time?

Absolutely! Simply prepare the drink as instructed, store it in the fridge, and chill just before serving. Once you’re ready to serve it, remove it from the fridge and enjoy! It should stay good in the fridge for up to four days.

What tequila do you recommend?

I personally like using Tequila Blanco, but any type of tequila will work well! It’s all about your personal taste and preference.

  • 12 Slices Jalapeño seeds removed⁣
  • 6 Ounces Fresh Lime Juice
  • 9 Ounces Tequila
  • 2 Ounces Cointreau
  • 3 Ounces Monk fruit Sweetener or substitute agave

Instructions

  • To make this drink, start by preparing the glass. Rub a lime wedge alongside the edge of a margarita glass.
