    If you’re looking for a sweet, summer cocktail that will make you feel like you’ve been transported straight to the Italian Coast, then this is the recipe for you. My Strawberry Aperol Spritz is bursting with notes of zesty oranges and fresh strawberries, making it feel like summer in a glass. Plus, this cocktail requires only four ingredients, making it so simple and easy to whip up on a warm summer afternoon!

    Friends, how many of you are traveling this summer? I wish I was! This summer, I am busy preparing by the launch of my upcoming book, LOVE TO EAT, which comes out in October. Can you believe it?! It feels like time has flown by so quickly, and I can’t believe it’s just a few months away. It’s officially available for pre-order now, and I am so excited to share it with the world!

    But because life is going to get extremely busy this fall, I am going to be having a relaxing summer, at home, in San Francisco. Normally I love traveling with my family in the summertime, but this summer calls for lots of quality time and relaxation. So instead of traveling, I’ll be daydreaming about days on the Amalfi Coast with an Aperol Spritz in hand. One day, I’ll get there!

    Since I can’t be there this year, I’m bringing a little taste of Italy to home… but with a Kalejunkie twist, of course. This recipe has all of the elements that you know and love about a classic Aperol Spritz, but with a delicious, strawberry twist. If you love a cocktail with a twist, like my No Sugar Added Watermelon Frosé or my Best Avocado Margaritas, then you are going to love this recipe!

    What is an Aperol Spritz?

    If you’ve never had an Aperol Spritz, then let me introduce you to this wonderful drink! Aperol Sprtiz’ are a bubbly apéritif that is often served as a digestive before meals. It’s said that they are meant to help stimulate your appetite, so that you can enjoy your meal better!

    Because an Aperol Spritz is Italian, I recommend serving this drink before an Italian or Mediterranean-inspired meal, like my Simple Lemon Garlic Pasta, my 10-Minute Vegan Pistachio Pesto Zucchini Noodles, or my Sheet Pan Lemon-Herb Salmon with Asparagus. You can’t go wrong with pairing my Strawberry Aperol Spritz with these recipes!

    What You Need to Make This Perfect Summertime Apéritif

    A classic Aperol Spritz contains only three ingredients, and this recipe uses only four! It could not be any simpler an easier to whip up this delicious cocktail recipe.

    • Fresh Strawberries: In order to give this cocktail its strawberry flavor, we’ll be using fresh strawberries! Make sure they are ripe and sweet, so that they yield the best flavor.
    • Aperol: Of course, an Aperol Spritz isn’t complete without the Aperol! If you’ve never had Aperol, it has a delicious orange flavor with hints of vanilla. You can find it at most grocery or liquor stores!
    • Prosecco: Aperol Spritz’ are known for their bubbles, which comes from Prosecco! Prosecco is an affordable Italian sparkling wine that can be found at most grocery stores. I recommend using a dryer Prosecco, so that this drink doesn’t turn out too sweet.
    • Club Soda: A touch of club soda adds the perfect, finishing touch! You can also use unflavored sparkling water, if you prefer.

    How to Make This Delicious Strawberry Aperol Spritz

    Making this cocktail is the easiest part! Simply start by washing and chopping your strawberries into small pieces, and add them to the bottom of two cocktail glasses. Next, use a muddler to muddle the strawberries together in the glasses. Try to mash them as much as possible, so you can really extract the juice from them!

    Then, pour in your Prosecco, Aperol, and club soda. Once done, garnish with some more strawberry slices, and fresh orange slices, if desired. Serve immediately and enjoy!

    This recipe makes two servings, so it’s perfect for you and a friend (or just for you… because you deserve it. 😉 )

    Equipment

    • 2 Cocktail Glasses I love these glasses for my Aperol Sprtiz!

    Ingredients

    • 4-6 Fresh Strawberries, tops removed and sliced into small pieces
    • 6 oz Aperol
    • 6 oz Prosecco
    • 2 oz Club Soda

    Instructions 

    1. Start by washing and chopping your strawberries, then add them to the bottom of your cocktail glasses.
    2. Next, taking a muddler or a spoon, muddle your strawberries as much as possible. We want to get all of the juice out of them that we can!
    3. Then, pour your Prosecco, Aperol, and club soda into the glasses.
    4. Top your drink with more fresh strawberry slices and fresh orange slices, if desired.
    5. Serve and enjoy!
