@kalejunkie SHEET PAN PUMPKIN PIE BARS, with a brown butter graham cracker crust, a creamy pumpkin pie filling and topped with sweet pecans. You can cut this into bars however big or small you like,⁣ and Thanksgiving dessert is served. No fuss, no worrying about cutting perfect pie slices, no stress. Just dig in. Serve alone or with whipped cream or ice cream! ⁣

Makes 12 servings⁣
Crust⁣
1 1/2 cups graham crackers, processed into crumbs like sand (the 1 1/2 cups is after processing and should be packed lightly in a measuring cup)⁣
2 tb coconut sugar (optional, makes a sweeter crust) ⁣
1/2 tsp kosher salt ⁣
1/2 cup unsalted butter⁣
⁣
Pumpkin filling ⁣
1 15 oz can pumpkin puree⁣
2 eggs⁣
1 14oz can coconut condensed milk (or regular)⁣
2 tb pumpkin pie spice⁣
⁣
Pecan topping⁣
1 1/4 cups raw pecans, chopped⁣
3 tb melted butter, unsalted⁣
2 tb coconut sugar⁣
⁣
Preheat oven to 350F. In a food processor, add the graham crackers and process until the texture is like sand. Transfer to a medium bowl, along with the salt. Mix and set aside. In a small saucepan over medium-low heat, add the butter and let it melt. Continue to swirl the pan and whisk, until the butter turns golden and nutty and smells amazing. This should take 3 minutes, but watch carefully bc it can go from brown to burned real quick! Pour the browned butter into the bowl with the graham crackers and mix well. It should look like wet sand. Get out a quarter size sheet pan. Dump the bowl into the pan and press down firmly. Bake for 10 minutes, and while that is in the oven, make the pumpkin pie filling! In a large bowl, whisk together all of the pumpkin pie filling ingredients. Pour over the crust. Bake for 35-37 minutes. It will be puffy when it comes out of the oven, but it will settle down. Finally, make the pecan topping. Mix pecans and maple syrup, then spread on top of the pumpkin layer. Let cool COMPLETELY before slicing into squares (you can pop in fridge to firm it up for slicing). Slice and enjoy! #pumpkinpie #pumpkinpiebars #easythanksgivingrecipes

It’s cozy, loaded with veggies and rotisserie chicken, and topped with store bought puff pastry because no one has time to make dough from scratch 🫢. I cannot wait for you to try this recipe and be sure to SAVE this post, SHARE with friends and FOLLOW for more!⁣

Makes 8 servings⁣
2 tb olive oil⁣
1 small yellow onion, finely diced ⁣
3 stalks celery, finely sliced⁣
2 large carrots, finely chopped⁣
1 1/2 cup white mushrooms, sliced⁣
3 cloves garlic, mashed⁣
1 lb rotisserie chicken, shredded⁣
4 tb butter, unsalted⁣
1/3 cup flour ⁣
1 1/2 cups chicken broth⁣
1/2 cup milk of choice or heavy cream ⁣
1 tb bouillon (optional)⁣
2 tsp dijon mustard⁣
2 tb fresh thyme, stems removed & chopped⁣
2 tb fresh rosemary, stems removed & chopped⁣
3/4 cups frozen peas ⁣
1 1/4 cups parmesan cheese, grated⁣
1 1/2 sheets frozen puff pastry ⁣
1 egg ⁣
Sesame seeds for garnish ⁣

In a large oven safe skillet, heat the olive oil over medium heat. Once the oil is hot, add the onion, carrots, and celery. Sauté for a few minutes and then add the mushrooms and garlic. Once the mushrooms have cooked down and softened, add the rotisserie chicken, stirring again. From there, add the butter and stir until fully melted, then add in the flour. It will look dry, but trust the process. Next, add the chicken broth, milk, bouillon (if using), mustard, thyme and rosemary. Continue stirring until the sauce begins to thicken. Add the peas and cheese, stirring until fully incorporated. Remove the skillet from the heat. Roll out thawed puff pastry so it is a bit thinner than it comes—cut squares or rectangles and place them in a single layer on top of the pot pie. Whisk egg and brush on top, then sprinkle with sesame seeds. Bake for 30-35 minutes until golden and puffy! Plate immediately and enjoy!

@kalejunkie MAKE-AHEAD BOURBON INFUSED CRANBERRY APPLE SAUCE, a new one this year and let me tell you—if you think you don’t like cranberry sauce, this will change your mind forever! ☺️Cranberries and apples go hand in hand, and the added bourbon that takes cranberry sauce from a boring side dish to something amazing! This one is not on the website until next week, so SAVE this post, and get the recipe here instead!⁣

Makes 16 servings ⁣
1 green apple, diced finely⁣
1 honey crisp apple, diced finely ⁣
1 large orange, zested and juiced⁣
1 large lemon, zested and juiced⁣
2 12oz bags of cranberries, rinsed well⁣
1 cup sugar⁣
1 cup water⁣
3 oz bourbon⁣
⁣
Chop your apples, and zest & juice the orange and lemon—set all of that aside. Next,⁣ add the cranberries, sugar, and water to a pot and cook over medium heat for about 7-8 minutes, or until the skins pop open. Add apple, zests, and juices and cook for about 15 minutes more, then add in the bourbon. Reduce heat to low and cook for 5 minutes more until thickened. Remove from the heat and let cool completely. The sauce will continue to thicken. Store in an airtight container in the refrigerator until ready to serve.⁣

The sweetness from the cornbread and cranberries is offset by the savory sausage and it’s filled with lots of veggies and all the traditional seasonings and fresh herbs—and you can make this in advance and reheat when ready to serve! As an added bonus, it looks beautiful and makes a great presentation! I can’t wait for you to try it!
