Spicy Lemon Arugula Pasta

SPICY LEMON ARUGULA PASTA - INGREDIENTS1 16 oz package of penne pasta of choice1/4 cup olive oil6 garlic cloves, mashed1 tsp red chili flakes2-3 cups organic arugula1 lemon, juiced and zested1/2 cup grated parmesan cheese1 tsp sea salt

SPICY LEMON ARUGULA PASTA

Ingredients

  • 1 16 oz package of penne pasta of choice
  • 1/4 cup olive oil
  • 6 garlic cloves, mashed
  • 1 tsp red chili flakes
  • 2-3 cup organic arugula
  • 1 lemon, juiced and zested
  • 1/2 cups grated parmesan cheese
  • 1 tsp sea salt

Instructions

  • Prepare pasta according to package instructions. 
  • When pasta is done, reserve 1/2 cup of the pasta water. 
  • While the pasta is cooking, heat the olive oil in a large pan over medium-low heat. 
  • Add garlic and stir for about 2 minutes, stirring but being careful not to let it burn. 
  • Add red chili flakes and sea salt and stir for one more minute. 
  • Remove from heat and set aside. 
  • Add the cooked pasta to the pan with the olive oil/ garlic sauce, mixing to coat well. 
  • Add the lemon juice, lemon zest, arugula, reserved pasta water, and parmesan cheese, stirring to coat everything well. 
  • Serve and enjoy!!!!
