Friends, it is time to say goodbye to plain ole’ boring rice cakes. That’s why I’m so excited to be sharing this rice cake recipe. I saw it floating around TikTok and first on Instagram on my girl Monique of Ambitious Kitchen‘s page.
It is a simple and easy take on a treat that anyone can enjoy! And the best part is, it’s so customizable. If you’re nut-free, simply use sunflower seed butter! If you’re vegan and/or dairy-free, use vegan-friendly chocolate.
The opportunities are endless here, and this is such a fun recipe to eat and play around with.
Pro tip: add ice cream, then add the melted chocolate and freeze. It will blow your mind.

What You Need to Make the Best Ever Delicious Rice Cake
All you need are four simple and easy ingredients to make the rice cake of your dreams! It could not be any easier, and if you’re like me, then you may already have these ingredients sitting in your pantry.
- Rice Cake: Of course, rice cakes are the base for this recipe, so you’ll need one!
- Peanut Butter: The combination of peanut butter and chocolate is truly unbeatable, but use whatever nut butter or nut-free alternative that you have! Almond or cashew butter would be delicious here, as would sunflower butter or granola butter for a nut-free alternative.
- Dark Chocolate: My favorite dark chocolate is, hands-down, from Hu Kitchen. Their chocolate has no funky ingredients, and has the best flavor! And you can use code KALEJUNKIE for 15% off your order!
- Coconut Oil: A little bit of coconut oil will help the dark chocolate melt!
- Flaky Sea Salt: And of course, a touch of flaky sea salt adds the perfect balance of flavors. Don’t skip this!

How to Make This Quick and Easy 10 Minute Snack
Making this rice cake could not be easier! Simply take your rice cake and spread your peanut butter (or other spread) across it evenly.
Next, in a small bowl, add your chocolate and coconut oil. Microwave in two, 30-second increments, being sure to stir the chocolate and coconut oil together in-between.
Finally, drizzle your melted chocolate over the rice cake and add a touch of flaky sea salt. Freeze for 10 minutes, then remove from the freezer and enjoy!

Ingredients
- 1 Rice Cake
- 1-2 Tablespoons Peanut Butter, or substitute nut butter or nut-free alternative of choice
- 2 Tablespoons Dark Chocolate Chips
- ½ Teaspoon Coconut Oil
- 1 Pinch Flaky Sea Salt, optional; for garnishing
Instructions
- Start by coating the top of your rice cake evenly with peanut butter, or nut butter of your choice.
- Next, place your chocolate and coconut oil into a small bowl and microwave in two, 30-second increments, being sure to stir in-between so that the chocolate and coconut oil are fully incorporated. You can also melt your chocolate using the double-boiler method on the stove, if preferred.
- Then, drizzle your melted chocolate on top of the rice cake.
- Top with flaky salt and place in the freezer for 10 minutes.
- Once the chocolate has solidified, eat and enjoy!
