I am back with my spin on another Viral TikTok recipe, and this may be one of my favorite ones yet. My Shredded Carrot Salad is a crunchy, cool, delicious salad that uses only eight different simple and healthy ingredients. Plus, it’s naturally gluten-free, paleo-friendly, and can be made vegan-friendly as well, so it’s the perfect crowd-pleasing salad to fit every diet!

Friends, who would have thought that TikTok would be the best platform to discover new recipes?! Gone are the days of browsing Pinterest for hours, only to end up pinning recipes that you’ll never actually make (I may or may not be guilty of this). When it comes to TikTok, I always end up finding new recipes that are quick, simple, and easy to throw together in a pinch!
And since I love putting my own spin on viral TikTok recipes, from my Pasta Chips that I shared last summer, to my Berry Custard Toast, I knew I had to make my mark on the viral Shredded Carrot Salad that has been making waves all across the TikTok platform.
As we move into the Summer months, this is a recipe that I know I will be making 24/7. It is so simple, so crunchy, so cooling, and so healthy. I just can’t wait to eat a big bowl of it down by the beach!

What You Need to Make This Cooling Carrot Salad
As mentioned above, all you need are 8 simple ingredients to bring this salad to life!
- Shredded Carrots: Of course, you’ll need shredded carrots for this recipe. I recommend using a peeler and shredding them yourself, so you can get nice, thick, long strands.
- Fish Sauce: You can use traditional fish sauce in this recipe, or opt for a vegan fish sauce to make this recipe vegan-friendly. The choice is up to you, and both work well here!
- Rice Vinegar: Rice vinegar is an essential ingredient in any Asian-inspired sauce.
- Lime: A touch of lime helps to cut through the vinegar and add a nice touch of acidity.
- Maple Syrup: Maple syrup adds a touch of sweetness, without the overpowering refined sugars. Plus, I love the combination of maple syrup and carrots, in recipes – don’t knock it until you try it!
- Sesame Oil: Sesame oil adds the best, toasty flavor to any Asian-inspired flavor profile. Don’t skip this!
- Sesame Seeds: Sesame seeds are rich in iron, zinc, and selenium, and add an unexpected crunch to this salad!
- Sea Salt: A little sea salt to taste helps finish off this salad beautifully!

How to Make This Viral, Crunchy Salad
Making this salad truly could not be any easier, as it comes together in only two steps! First, start by shredding your carrots. You can leave the skin on, so long as you’ve scrubbed the carrots well to remove all of the dirt, but I prefer to remove the skin before shredding them.
Then, simply add your carrots to a large bowl, along with all of the other ingredients. Toss to combine, top with additional sesame seeds, if desired, and enjoy!
You can store any leftovers in an airtight container in the fridge for up to one week. The longer this recipe sits, the better the flavors develop!

Ingredients
- 4-5 Carrots, shredded
- 1 Teaspoon Fish Sauce, or substitute vegan fish sauce
- 1 Teaspoon Rice Vinegar
- ½ Lime, juiced
- 1 Teaspoon Maple Syrup

- 1-2 Tablespoons Sesame Seeds
- Sea Salt, to taste
Instructions
- Start by washing and shredding your carrots. You can leave the skin on, so long as they're scrubbed clean, but I choose to remove and discard the skin!
- Next, add your carrots to a large bowl alongside all of the remaining ingredients.
- Toss to combine, and top with additional sesame seeds if desired. Enjoy!
