    Friends, one of my favorite parts of summertime is the abundance of fresh watermelons. These sweet, hydrating, delicious melons are not only perfect for cooling down during the warmer months, but also have a host of different nutritional benefits, making them a true superfood!

    But while we all know that the fruit itself is both delicious and nutritious, did you know that the rind of the watermelon is as well? It’s true! While the rind is a little bit tougher than the “flesh,” it takes on a refreshing taste that is similar to that of a cucumber. And, like a cucumber, it is rich in fiber and antioxidants, making it the perfect ingredient to add to smoothies or juices!

    How to Make These Simple & Easy Watermelon Rind Cubes

    Making these cubes are super simple and easy! All you have to do is chop up your watermelon rinds into nice, small pieces.

    Next, get out a high-speed blender (like a Vitamix) and dd in your watermelon rinds to it, along with water. Then, blend until the mixture is totally smooth – this will take a few minutes, and you may need to use a paddle, if your blender has one, to make sure that the rinds blend properly.

    Then, transfer your mixture to an ice cube tray, and place in the freezer overnight, until the mixture is fully solidified.

    Once done, add your cubes to your smoothies or juices as desired! Store any leftovers in the freezer – they should stay good for about three months! Enjoy!

    Equipment

    • 1 Blender  I love my Vitamix blender, and will always recommend it!

    Ingredients

    • 1 Watermelon, Just the rinds; remove the flesh and eat it later!
    • ½ Cup Water

    Instructions 

    1. Start by removing the rinds off your watermelon and placing them in a high-speed blender (like a Vitamix.)
    2. Next, pour your water into the blender, and blend until the rinds become smooth and creamy. You may need to use a paddle, if your blender has one, to ensure that the rinds are fully incorporated!
    3. Then, once your mixture is done, pour it into an ice cube tray.
    4. Cover and freeze overnight.
    5. Once your cubes are fully frozen, remove them from the freezer and add them into smoothies or juices, as desired! Store any leftovers back in the freezer for up to three months. Enjoy!
