Friends, when it comes to creating the perfect smoothie recipes, I don’t play around. Almost every single day I drink a high-protein, nutrient-packed smoothie after my morning workouts, and no matter what smoothie I’m making, I have one qualification: it MUST be delicious.

Whether I’m making a creamy, chocolatey, Chocolate Cookie Milkshake Smoothie, or I’m making the Ultimate Kale Smoothie (and yes, it really is the ultimate smoothie recipe), there are so many unique ways to make a smoothie both delicious and nutritious. And when it comes to a smoothie that may fulfill both roles… well, this Blueberry Lemon Pie Smoothie may just be my new favorite!

As the winter weather is still very-much in full-swing here in San Francisco, I am dreaming of summer days full of sunshine and bright flavors. The lemon in this smoothie is the perfect way to give you that zesty taste of sunshine in the mornings, and have you dreaming of those late summer days!

What You Need to Make This Creamy, Lemony Smoothie Recipe

All you need are just a few simple ingredients to bring this delicious, creamy smoothie to life! And if you’re anything like me, you may even already have these ingredients sitting in your pantry / freezer.

  • Frozen Blueberries: Of course, you’ll need blueberries to make this Blueberry Lemon Pie Smoothie! I love using frozen blueberries because their frozen texture makes this smoothie nice and thick. And, frozen blueberries cost a fraction of the price of fresh blueberries, but contain all of the same nutrients.
  • Frozen Cauliflower Rice: I love adding frozen cauliflower rice to my smoothies, because it adds an extra dose of fiber and nutrients without impacting the flavor!
  • Lemon: You’ll need both the juice and the zest of one lemon to make this recipe!
  • Dates: Pitted dates add a creamy, caramel-y sweetness that truly makes this smoothie taste like pie!

  • Vanilla Protein Powder: A scoop of protein powder ensures that this smoothie is packed with protein, and the vanilla flavor truly makes this smoothie taste like dessert.
  • Cashew Butter or Almond Butter: You might be wondering how this smoothie can taste like a pie without the crust, and the answer lies within using a little bit of nut butter. A touch of cashew butter or almond butter makes this smoothie truly taste like a pie, so don’t skip this!
  • Almond Extract: A touch of almond extract is my secret to making recipes taste like they’re fresh from the bakery- and yes, this even applies to smoothies!
  • Milk of Choice: Any type of milk (dairy or non-dairy) works well in this recipe. I love using almond milk or homemade oat milk for extra creaminess.

3 “Hacks” To Making the Perfect, Creamy Smoothies, Every Time

As someone who makes smoothies daily, I’ve learned very quickly what to do (and what NOT to do) to make the perfect smoothies, every time. These are my top tips that I promise will yield the most delicious smoothies!

  1. Use frozen fruit: This recipe calls for FROZEN blueberries, and that’s for a good reason. The ice from the frozen fruits adds thickness to the smoothie, without needed to add in additional ice.
  2. Play around with the liquid amount: If you find that your smoothie is too thick to blend, don’t panic! It happens! Just add a bit more milk, blend, open the cover, scrape down the sides if needed, and blend again. And if you have both a high-speed blender and a smaller blender (like a Nutri-bullet), use the high-speed blender instead, as it will blend the frozen fruit much better.
  3. Blend your smoothie on medium speed. If you blend the smoothie too fast from the beginning, it’s really hard for the blender to properly blend the frozen ingredients – so start lower and then gradually increase the speed.

Ingredients

  • 1 Cup Frozen Blueberries
  • ½ Cup Frozen Cauliflower Rice
  • 1 Lemon juiced and zested
  • 2 Dates pitted; or, substitute 1/2 of a banana
  • 1 Scoop Vanilla Protein Powder
  • 1 Tablespoon Cashew Butter or Almond Butter
  • ½ Teaspoon Almond Extract optional but highly recommended
  • 1 Cup Milk of Choice

Instructions

  • Add all of your ingredients to a blender and blend on high until they're fully combined.
  • If needed, you can pause the blender, remove the lid, and scrape down the sides so that everything is fully incorporated.
  • Once done, serve and enjoy! This recipe makes one large smoothie, or two normal-sized ones!

    Blueberry heaven, I made this last week for week 2 January 2023 smoothie challenge and I was so surprised that lemon and almond milk can go together.
