Chicken Lettuce Cups

CHICKEN LETTUCE CUPS

Ingredients

  • 1 pound ground chicken⁣
  • 1 onion diced⁣
  • 4 cloves garlic mashed⁣
  • 1 tablespoon ground ginger⁣
  • 1 8 oz can water chestnuts diced⁣
  • 1/4 cup chopped green onion⁣
  • 1 tablespoon avocado oil⁣
  • 1/2 head butter lettuce⁣

⁣FOR THE SAUCE:

  • 2 tablespoons rice vinegar⁣
  • 3 tablespoons gluten free hoisin sauce⁣
  • 2 tablespoons sesame oil⁣
  • 4 tablespoons soy sauce or coconut aminos for a gluten free option⁣
  • 1 tsp siracha ⁣

Instructions

  • Sauté the onion, garlic and ginger in the avocado oil, about 3 minutes.
  • Next, add the chicken and continue sautéing, breaking down the chicken.
  • While that’s cooking, prepare the sauce by whisking together above sauce ingredients.
  • Pour the sauce into the chicken mixture and then let it cook for another few minutes, so the sauce thickens.
  • Stir in the green onion and water chestnuts.
  • Fill your lettuce cups with the chicken mixture and enjoy!
