Creamy Peanut Butter Tofu Fudgcicles

You’ll never guess what the secret ingredient is to making the creamiest, dreamiest fudgcicles – tofu! That’s right, these are my Creamy Peanut Butter Tofu Fudgcicles and do NOT knock them until you try them. They are made from creamy chocolate and peanut butter, and guess what? You won’t even taste the tofu. Make them for yourself and you’ll see how delicious this high-protein treat can be!

Your Favorite Childhood Treat – Made Healthier!

When I was a kid, one of my favorite summertime treats was a fudgcicle – do you remember those? The creamy, fudgy popsicles that were loaded with sugar but also happened to be the perfect way to cool down on a summer day. I absolutely loved them, and now, my boys love them, too!

So, when I was making a list of all of the summertime recipes that I wanted to create this year, I knew that I wanted to recreate this classic summertime treat. But, I wanted to add the Kalejunkie spin to it, by making it healthier, refined sugar-free, and packed with protein. And the secret ingredient to doing just that? Two words: silken tofu.

Now, you might be thinking, “Nicole, why the heck would you add silken tofu to a chocolate recipe?” And I know, it sounds crazy. But silken tofu has been used for years by vegan and dairy-free chefs to make creamy, delicious desserts, sans the dairy. When blended with the chocolate, peanut butter, and other ingredients, you won’t even taste the tofu. But, what you will taste is the rich, creamy chocolate that not only tastes delicious, but has enough protein to keep you feeling satisfied, too! I’m a big believer that a healthy lifestyle leaves room for ALL foods to have a seat at the table – including traditional, sugar-filled fudgcicles.

However, if you have little kids (like me) and are looking for ways to sneak more protein into their diets, these creamy popsicles are the perfect way to do just that, while also giving them a classic treat that they’ll want to enjoy all summer long. In true Kalejunkie fashion, this recipe is proof that you don’t need to sacrifice flavor for the sake of health! My boys could not be more obsessed with these popsicles during the warm summer months. In fact, it’s a sad day in my household when we don’t have these sitting in the freezer!

What You Need to Make This Nostalgic Summer Treat

  • 🍫 Chocolate Chips: Chocolate chips are key for not only making the fudgsicles perfectly fudgy, but also for forming the delicious, chocolate topping!
  • 🥥 Coconut Oil: When mixed with the chocolate chips, the coconut oil helps to form a smooth, silky consistency.
  • Silken Tofu: The secret star of this recipe is none other than silken tofu. Don’t knock it until you try it – the silken tofu not only makes these fudgcicles perfectly creamy, sans the dairy, but it also packs them with protein, making them a much healthier option than their store-bought countertparts.
  • 🍁 Maple Syrup: Maple syrup adds just the right amount of sweetness, without the refined sugars.
  • Powdered Peanut Butter: Powdered peanut butter is perfect for this recipe, because it adds protein (as well as that classic peanut butter taste) without the added liquid from the oil – this is important so that the fudgcicles reach the right texture.
  • Water: This is optional, but if the fudgsicle blend ends up being too thick, you can use a little bit of water to thin it out.
  • 🥜 Salted Peanuts: Crushed, chopped, salted peanuts make for the perfect finishing touch to these fudgsicles!

Next, pour the mixture evenly into 6 popsicle molds. Transfer the popsicles to the freezer and allow them to freeze for approximately 4 hours, or until they’re completely frozen.

How to Make These Protein-Packed Chocolate Popsicles

To make these fudgcicles, start by preparing the fudgsicle base. Add the chocolate chips and the coconut oil to a small bowl and transfer it to the microwave. Microwave the chocolate and coconut oil together in 2-3, 30 second increments until the chocolate has melted. Stir the chocolate and coconut oil together, then set it aside.

Next, prepare the fudgcicles. Add all of the fudgcicle ingredients (the melted chocolate chips, silken tofu, maple syrup, and powdered peanut butter (if using) to a high-speed blender and blend until smooth. If the mixture is too thick, add in the water and blend again, until it reaches a thinner consistency.

Next, pour the mixture evenly into 6 popsicle molds. Transfer the popsicles to the freezer and allow them to freeze for approximately 4 hours, or until they’re completely frozen. Once they’re frozen, remove the fudgsicles from the freezer and prepare the topping.

Repeat steps 1-2, melting the chocolate chips and coconut oil together to form the topping. While the chocolate is melting, chop the salted peanuts and add them to a plate.

Finally, remove the fudgsicles from the molds and dip each one into the chocolate first. Then, roll them in the crushed peanuts. Repeat until all of the fudgsicles have been topped. Once they’re done, eat and enjoy! Store any leftover fudgsicles back in the freezer, for up to two months.

  • 1 Blender
  • 1 Microwave
  • 6 Popsicle Molds
  • 6 Popsicle Sticks

Ingredients

For the Fudgcicles:

  • Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil
  • 1 14 Ounce Package Silken Tofu drained
  • ¼ Cup Maple Syrup
  • ¼ Cup Powdered Peanut Butter optional
  • ¼ Cup Water if needed

For the Topping:

  • Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil
  • ½ Cup Salted Peanuts crushed

Instructions

  • To make these fudgcicles, start by preparing the fudgsicle base. Add the chocolate chips and the coconut oil to a small bowl and transfer it to the microwave.

  • Once they're done, eat and enjoy! Store any leftover fudgsicles back in the freezer, for up to two months.
