But this summer, we're kicking our traditional Aperol Spritz up a notch.     The Aperol Spritz is the ultimate summer cocktail. This bubbly Italian cocktail is sweet, refreshing, and bursting with fresh citrus to cool you down on a warm summer day. But this summer, we’re kicking our traditional Aperol Spritz up a notch. Introducing this Frozen Blended Strawberry Aperol Spritz – a creamy, fruity, frozen Aperol Spritz that you will absolutely love. It’s full of fresh strawberries and juicy oranges for a summer drink that will truly delight the senses.

    When my dear friend Olivia came to town recently and said she wanted to make some recipes with me, the first thing we began dreaming up together was the ultimate summer cocktail. I mean truly… what could be better than sitting outside, in the summer sunshine, and sipping on a refreshing cocktail? I can think of one thing… a FROZEN summer cocktail that almost feels like a slushy. My mouth is watering just thinking about it! We dreamed up this recipe together, and I couldn’t be more excited to share it with you. If you haven’t checked out Olivia’s recipes, you MUST. She is amazing and one of my favorite creators (and dear friends!)

    One of my all-time favorite summertime cocktails is the Aperol Spritz. It’s traditionally served as an Italian aperitif meant to accompany meals, but because this drink is anything but traditional, it can truly be enjoyed anytime. I highly recommend pairing it alongside our 10 Minute Air Fryer Shrimp Tacos that are topped with our Mango-Avocado Salsa. Oh, and if you haven’t followed Olivia yet, go check out her page. Her recipes are all gluten and dairy-free, and I can personally attest: they are AMAZING.

    But back to this Aperol Spritz: this drink was truly a love letter from both of us, and a combination of so many of our favorite things. It’s bursting with sweet strawberries and juicy oranges that are whipped together into a frozen concoction that is perfect for helping you cool down on a warm summer day.

    To make this drink, you will need strawberries, Aperol, Prosecco, club soda, oranges, ice, and orange slices

    What You Need to Make This Perfect Summertime Cocktail Recipe

    • Strawberries:You can use fresh or frozen strawberries in this recipe. Both work just as well and add a bright, juicy flavor to this recipe!
    • Aperol: Of course, it wouldn’t be an Aperol Spritz without the Aperol! Aperol is a bright orange, Italian aperitif that is slightly bitter and perfectly offsets the sweetness of the Prosecco.
    • Prosecco: Prosecco is a sweet sparkling wine that is crips and refreshing, and is a key component to the classic Aperol Spritz.
    • Club Soda: A touch of club soda helps give this drink some more volume.
    • Oranges: The key to getting this recipe perfect is to use a very juicy orange. We want a lot of orange juice! If your orange is more on the dry side, then I recommend using two oranges here.
    • Ice: Some ice cubes help to give this drink its frozen texture!
    • Orange Slices: These are optional, but I love garnishing these drinks with fresh orange slices for a pretty finishing touch!

    Next, add in the Prosecco, club soda, orange juice, club soda, and ice, and blend again until smooth.

    Finally, divide the drink between two tall glasses and garnish with a slice of fresh orange, if desired.

    How to Make This Frozen Strawberry Cocktail

    To make this drink, start by adding the strawberries and Aperol to a blender and blend until smooth. Next, add in the Prosecco, club soda, orange juice, club soda, and ice, and blend again until smooth.

    Finally, divide the drink between two tall glasses and garnish with a slice of fresh orange, if desired. Then, serve with your favorite summer meal and enjoy this sweet and refreshing drink!

    • 1 Blender You already know that myĀ VitamixĀ is my ride-or-die blender. It is my favorite kitchen gadget, and I use it every single day!

    Ingredients

    • 2 Cups Strawberries, frozen
    • 6 Ounces Aperol
    • 2 Ounces Prosecco
    • 2 Ounces Club Soda
    • 1 Juicy Orange, juiced – if your orange isn't super juicy, you may need two!
    • 2 Cups Ice
    • Orange Slices, for garnishing

    Instructions 

    1. To make this drink, start by adding the strawberries and Aperol to a blender and blend until smooth.
    2. Next, add in the Prosecco, club soda, orange juice, club soda, and ice, and blend again until smooth.
    3. Finally, divide the drink between two tall glasses and garnish with a slice of fresh orange, if desired.
    4. Then, serve and enjoy!
