These wraps are filled with tender chicken, crunchy lettuce, and a creamy homemade caesar dressing that is so delicious, you’ll want to eat it with a spoon!
Back in my days as a lawyer, one of the hardest things was trying to find healthy, quick, and convenient lunches that would keep me full, without taking me too much time to make. After all, when you’re working 12-14 hour days, the absolute last thing that you want to spend your precious time on is making lunch. I wish I could’ve gone back in time and shown myself the quick, healthy, and delicious recipes that I know now. I can only imagine how much better my life would have been.
But since I can’t go back in time and give myself this recipe then, I’m giving it to you now! This is seriously one of my all-time favorite lunch recipes to ever hit the blog. Why? Because it’s simple, it’s healthy, it’s easy, it’s packed with protein, and it is truly a recipe that everyone will love.
Plus, these wraps can easily be modified to fit a variety of different diets. You can substitute out a gluten-free tortilla to make it gluten-free (Siete makes burrito-sized grain-free tortillas) or swap out the rotisserie chicken for crispy fried tofu to make this recipe vegetarian-friendly. The opportunities here are truly endless!
To make these Healthy Chicken Caesar Wraps, you’ll need a tortilla, romaine lettuce, rotisserie chicken, grated parmesan cheese, and my healthy Caesar salad dressingStart by preparing your healthy Caesar salad dressing. Then, set it aside and place a tortilla on top of a sheet of parchment paper. Top your tortilla with a few leaves of romaine lettuce and shredded rotisserie chicken.
5 Ingredients Needed to Make These 5-Minute Wraps
All you need are five simple ingredients in order to make this healthy and satisfying lunch!
Tortilla: You’ll want to use a big, burrito-sized tortilla for this recipe!
Romaine Lettuce: Romaine lettuce adds the perfect amount of crunch to this wrap.
Rotisserie Chicken: I love to buy a rotisserie chicken at the beginning of the week and use it in a variety of different recipes, from my Cozy Lemon Chicken & Rice Soup to my Healthy Chinese Chicken Salad, rotisserie chicken is one of the most versatile ingredients that you can have on-hand at any time. And this wrap is the perfect way to use it!
Homemade Caesar Dressing: Of course, the key to this wrap is the homemade caesar dressing! This dressing is creamy, delicious, and packed with protein. You truly won’t be able to get enough of it!
Parmesan Cheese: Of course, a Caesar salad wrap wouldn’t be complete without a mountain of freshly grated parmesan cheese. While this recipe calls for 1/4 cup of cheese, feel free to pile it on to your liking!
Then, pour your healthy Caesar salad dressing on top of the chicken. I like a lot of dressing, so don’t be afraid to go generous here!
How to Make This Simple & Easy Lunch Recipe
To make these Healthy Chicken Caesar Wraps, start by preparing your homemade caesar dressing according to this recipe! It is so simple and easy and it is truly my new favorite dip to eat with almost anything.
Next, grab your tortilla and warm it briefly on the stove, so it is soft and pliable. Once your tortilla is warmed, place it onto a sheet of parchment paper.
Finally, top your wrap with shredded parmesan cheese and use your hands to roll it up like a burrito. The parchment paper will help with this.Slice it in half, serve, and enjoy!
Spread your caesar dressing across the tortilla, then top it with your romaine lettuce, rotisserie chicken, and lots of freshly grated parmesan cheese. Finally, roll up your wrap, using the parchment paper as a guide, serve, and enjoy! If you have trouble rolling up the wrap, check out the video to see how I do it. I used whole milk greek yogurt. High protein and low cal, around 300 with my tortilla, tomatoes and arugula/spinach, and 30g protein. I added more anchovies and added the cheese to the caesar dressing when I blended. I cooked the chicken in a slow cooker and when it was done I used a hand mixer to shred the chicken. Then I added about a cup of the dressing to the chicken and stirred. So good. Have already recommended it to friends and family.
I like how easy these are to make. I have a Vitamix also and whipping up the dressing was super fast. I think next time I’ll use whole milk Greek yogurt for hopefully a thicker consistency because it was too drippy. The flavor of the healthy Caesar dressing with anchovies is delish!
