Paleo Cinnamon Streusel Banana Bread

I don’t know how the time passed so quickly this year, but here we are and it’s already December, which means the holidays are right around the corner. As always, I am in fully cookie-making mode, but sometimes even I need a bread from the cookies.

Enter my Paleo Cinnamon Streusel Bread – I wanted to create a recipe that was a little more special than just a banana bread. I wanted to create something that had a little magic on the INSIDE. This bread is just that – the streusel topping is infused both inside and on top of the bread, for extra yum and crunch.

I also created this recipe so it’s low in sugar. The loaf is sweetened with bananas and only 1/4 cup of my favorite Manuka honey from Wedderspoon, and you’ll be surprised how good something tastes when it’s not loaded with sweetness.

Ingredients

FOR THE BREAD:

  • 3  large and very ripe bananas
  • 3 eggs, room temp
  • ¼ cup Wedderspoon Manuka honey
  • cup almond butter
  • ¼ cup coconut oil, melted
  • ½ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp sea salt

FOR THE STREUSEL TOP:

  • ½ cup almond flour
  • ½ cup coconut sugar
  • 3 tbsp coconut oil, melted
  • ¼ cup pecans, finely chopped
  • ¼ cup walnuts, finely chopped

Instructions

  • Preheat oven to 350.
  • Line a standard size loaf pan with parchment or grease the inside well, so that the bread doesn't stick
  • Prepare streusel topping by mixing together ingredients, and place in refrigerator while you prepare the bread.
  • In a blender, lightly blend the bananas, eggs, honey, almond butter, and coconut oil.
  • Add the dry ingredients to the blender, and lightly blend until just incorporated.
  • Pour half the batter into the loaf pan.
  • Add half the streusel topping followed by remaining batter, topped with the remaining streusel.
  • Bake 45-50 minutes or until toothpick comes out clean.
  • Let cool for one hour before slicing so everything sets!

    I made this twice now. I love the streusel and the mild banana bread flavour. So satisfying for breakfast! It def does not taste like a “healthy alternative” and I portion it out so it’s a reasonably filling snack. To make it extra good I added a bit of almond butter on top at the end too. Warming it up each time you eat it makes it the perfect texture too.

  2. Another amazing KJ recipe! I cheated and made this in the food processor and it still turned out amazing. I was also feeling lazy, so I only did the streusel topping on the very top but it didn’t impact the taste whatsoever. I also love that this bread uses coconut flour! KJ recipes never fail and this one is another favorite!

    • 1 cup of organic powdered sugar + 3 tb water. It gets thick and you drizzle on top. It’s definitely optional though! 🙂
