I felt like making a paleo bagel that actually tastes like a New York chewy style bagel (you know, bagels the size of a house, that you can actually slice and toast and don’t fall apart), and that is exactly what I did! They also happen to be grain-free and egg free, so that’s an added win if that matters to you, and I’m gonna go on the record here and tell you that they are one of the best things I’ve ever made/eaten, so you’ve got that going for you if you make this recipe! I started with @bakeit.paleo’s ‘Grain Free Seedy Bagel’ recipe and then changed a few things…

INSTRUCTIONS

Preheat oven to 350.
Line a baking sheet with parchment paper and set aside.
In a small bowl, mix the flax and hot water. Let sit to thicken.
In a medium bowl, mix together the coconut flour, almond flour, arrowroot flour, baking soda, salt, xanthan gum, and make sure everything is well mixed.
Next add the maple syrup and coconut oil to the bowl with the flax + water mixture, mixing until there are no clumps.
Pour contents into the bowl with the flours.
Add the warm water and seeds.
Form a ball with the dough. Then, break the dough into four smaller balls.
Press your thumb in the middle of each one, form bagel shape, and lay on the parchment paper.
Bake for 20 minutes. ⠀

  1. Quick question love, is the xanthan gum necessary? I have heard bad things about it, but I know it is probably what helps it bind together and not crumble.

    Thanks!! <3
