Pineapple Upside Down Cake Pancake Dippers

My Pineapple Upside Down Cake Pancake Dippers are a simple, fun, and healthy way to eat your morning pancakes, while feeling like you’re eating a delicious dessert. The best part is, this recipe can easily be made gluten-free, paleo-friendly, and/or vegan-friendly; it’s completely customizable to your dietary needs!

Friends, is there anything better on the weekends than pancakes?! Whether you’re a kid or a kid-at-heart, there’s something so special about weekend pancakes. Those fluffy, slightly-sweet cakes doused with butter and fresh maple syrup are a treat that truly never gets old. Which is why any opportunity to kick pancakes up a notch, in my opinion, is a good one. 😉

You may remember that a few months ago, I shared my Healthy Apple Pancake Dippers, which have been my favorite new way to eat pancakes! Think: crisp apple slices wrapped in a fluffy pancake layer and dipped into maple syrup. Believe me when I say that it’s as good as it sounds. Since then, I’ve also created my Strawberry Pancake Dippers (aka my favorite summer pancake recipe!) And now, I’m so excited to be sharing my Pineapple Upside Down Cake Pancake Dippers. Petition for pancake dippers to become the pasta chips of 2022!

“What Type of Pancake Batter Should I Use For My Pancake Dippers?!”

If you’re wondering what batter you should use for your pancake dippers, then I have good news for you: it doesn’t matter!

The best part about this recipe is that it works with virtually any pancake batter of your choosing. All you need to do is prepare your batter according to the package directions, and then follow the recipe as directed. I’ve tried this recipe with multiple different pancake batters (ranging from vegan to gluten-free to conventional), and all of them work just as well!

Personally, I use the Birch Benders pancake mix in my home, because it’s full of simple, healthy ingredients and yields the perfect pancakes, every time. Plus, my boys love it!

What You Need to Make These Delicious, Fruity Pancake Dippers

All you need are a few simple ingredients to make these pancake dippers come to life!

  • Pineapple: Of course, you need pineapple to make these Pineapple Upside Down Cake Pancake Dippers! You can use fresh or canned pineapple – both work well, in this recipe.
  • Maraschino Cherries: The secret to *really* making these pancake dippers taste like a pineapple upside down cake? It’s all in the maraschino cherries. They are delicious and add the perfect, nostalgic touch to this recipe!
  • Pancake Mix: As mentioned above, pick your favorite pancake mix and use it in this recipe! Any pancake mix will do.
  • Powdered Sugar (optional): And to make these pancake dippers even better, I recommend dusting them with a coating of powdered sugar. It’s optional, but highly recommended – it adds a delicious finishing touch!

How to Make These Perfect Pancake Dippers

Making these pancake dippers could not be any easier! Simply start by preparing your pancake mix according to the recipe and/or package directions, and set aside.

Next, take your skewers and place your pineapple and cherries on each one, alternating them across the length of the skewer. I used about two pieces of pineapple and two cherries per skewer, but because skewer sizes can vary, use whatever you have room for!

Then, heat a nonstick pan on the stove, over medium heat. While the pan is heating, carefully dip each of your skewers into the pancake batter, until the fruit is fully coated in the batter. Once the pan is hot, place the skewers into the pan, letting them sit for about 2 minutes before flipping to the other side. Be sure to rotate your skewers every minute or so, until they’re golden brown and the pancake batter is fully cooked!

Finally, remove them from the heat, and dust them with powdered sugar, if desired. Served immediately, and enjoy!

  • 1 Cup Pineapple cubed
  • 12 Maraschino Cherries pitted; or substitute for regular cherries
  • 1 Cup Pancake Mix of Choice
  • Powdered Sugar optional; for garnishing

Instructions

  • Start by preparing your pancake batter according to the recipe / package instructions. Then, set aside.
  • Next, place your cubes of pineapple and your maraschino cherries on skewers, alternating them across the length of the skewer. I used two pieces of pineapple and two cherries on each one, but use whatever you have room for!
