Valentine’s Day is all about indulging in sweet treats with your loved ones, and what could be better than a warm, gooey cinnamon roll straight from the oven? This year, why not try something a little different with my vegan, refined sugar-free Single Serving Strawberry Cinnamon Roll – a healthier twist on the classic dessert. This recipe is perfect for a Valentine’s or Galentine’s celebration, or anytime that you’re craving a sweet and simple treat!

Valentine’s Day is all about showing love and appreciation for those around us, and that includes ourselves. After all, you are the MOST important relationship in your life, and you deserve to feel the love too! This single-serve strawberry cinnamon roll is the perfect dessert for a cozy night in with either your special someone, or yourself. Serve it with a hot cup of tea or coffee, and enjoy a sweet and satisfying end to your Valentine’s Day celebration.

It’s the ultimate, healthy, decadent, and delicious meal, and I can’t wait to be making these dishes for my husband and I, this Valentine’s Day!

And the best part about this recipe? It’s so easy to customize! If you want to make it vegan-friendly, you can easily swap out the yogurt and butter for dairy-free alternatives. Want to make it gluten-free? Simply use a gluten-free self-rising flour! It’s as simple and easy as that, which makes this a dish that everyone can enjoy.

What You Need to Make This Single-Serving Cinnamon Roll

  • Banana: Instead of using an egg in this cinnamon roll (because let’s be honest: eggs are expensive these days), we’ll be mashed banana. I recommend using a ripe banana, so that is mashes well!
  • Yogurt: You can use either dairy yogurt or dairy-free yogurt, in this recipe. Both work equally as well here!
  • Self-Rising Flour: Self-rising flour is key to this recipe, and you can use either conventional or gluten-free self-rising flour. If you don’t have any on hand, see below for tips on how to make your own!

Roll the dough into a ball, then roll it out with a rolling pin. Melt your butter, mix it with the cinnamon and sugar, then spread it across the rolled out dough.
  • Freeze Dried Strawberries: Freeze dried strawberries are the secret to giving these cinnamon rolls their strawberry flavor, but without the fresh strawberries. Why? Not only are fresh strawberries expensive these days, but they can also bleed into the dough, leaving you with a bright pink cinnamon roll!
  • Butter: To make this single-serving cinnamon roll, you can use either traditional butter or vegan butter. both work equally as well!
  • Brown Sugar: Brown sugar adds a nice, toasty flavor to this cinnamon roll that truly makes it melt in your mouth.
  • Cinnamon: Of course, it wouldn’t be a cinnamon roll without the cinnamon.
  • Powdered Sugar: Powdered sugar is necessary to help this glaze come together. By combining the sugar with a little water and some freeze dried strawberries, your delicious strawberry glaze will come together in under a minute!
  • Water: A little water helps the glaze come together!

No Self-Rising Flour? Here’s an Easy Way to DIY Your Own!

And if you don’t have any self-rising flour on hand, no worries! Here is a simple and easy way to make your own in a pinch!

For a 1/2 cup of self-rising flour, combine your flour (gluten-free or not), 3/4 teaspoon of baking powder, and a pinch of sea salt in a bowl. Then, use as directed in your recipe! It’s as simple and easy as that.

Finally, while your cinnamon roll is baking, prepare the glaze by mixing together your powdered sugar, freeze dried strawberry powder, and water until a glaze forms.

How to Make This Fun and Festive Cinnamon Roll

To make this cinnamon roll, start by peeling and mashing your banana in a bowl, with a fork, until it is almost pureed. Then, set aside and prepare your strawberries by adding your freeze dried strawberries to a food processor and pulsing until a powder forms. Then, add the powder to the bowl with the banana, along with the yogurt and self-rising flour.

Preheat your oven to 350 F while you prepare the rest of the dough.

Mix until fully combined and the dough is sticky. Keep adding in more flour, 1 tablespoon at a time, until the dough forms a ball, then transfer the ball to a floured surface. Use a rolling pin to roll out the dough, but be careful that it doesn’t break!

Next, cut your dough into two strips, then roll each strip together. Look at the video for exact instructions on how to do this!

Finally, transfer your cinnamon roll to a greased ramekin or mug and bake at 350 F for 15 minutes. While the cinnamon roll is baking, prepare your icing by mixing the icing ingredients together, in a bowl, until there are no clumps.

Once your cinnamon roll is done, remove it from the oven and let cool completely before adding in the icing. Then, add the icing, serve immediately, and enjoy!

  • 2 Tablespoons Yogurt of Choice use dairy-free yogurt to make this recipe vegan-friendly!
  • ½ Cup Self-Rising Flour
  • 2 Tablespoons Freeze Dried Strawberries blended into a powder

For the Filling:

  • 1 Tablespoon Butter or Vegan Butter melted
  • 1 Tablespoon Brown Sugar or substitute coconut sugar
  • ½ Teaspoon Cinnamon

For the Icing:

  • ¼ Cup Powdered Sugar
  • 1 Tablespoon Freeze Dried Strawberries blended into a powder
  • 1 Teaspoon Water
