Friends, it’s officially one of my favorite times of the year: watermelon season. Every summer, I look forward to the days when the grocery stores are filled with bins of fresh watermelons sitting out front. Not only is it a clear sign from the universe that long summer afternoons are ahead (my favorite), but it’s also a sign that it’s time to break out some of my favorite watermelon-based recipes.
Many people don’t know this, but watermelon is actually a super versatile ingredient, and can be prepared in so many different ways, both sweet and savory. Since it has a more mild flavor, it pairs perfectly with a variety of different ingredients. You can enjoy it greek-style with my Watermelon Feta recipe, which is a riff off of a dish from one of my favorite San Francisco restaurants, Kokkari. Or, enjoy it as a sweet and refreshing shaved ice, with this viral TikTok recipe from last year. No matter how you choose to enjoy it (even in a boozy, refreshing drink), you can’t go wrong. So this year, I am excited to introduce my first watermelon recipe of the season, with this Watermelon Strawberry Cucumber & Feta salad.
This light and refreshing salad may look simple, but it is truly packed with flavor. It starts with a base of fresh sliced watermelon, strawberries, and Persian cucumbers, which are then served with feta cheese and fresh mint, before being topped off with a honey vinaigrette dressing. The end result? A salad that is perfect for pairing alongside any of your favorite mains, whether that’s a perfectly-cooked chicken, a juicy turkey burger, or a good ole steak. Or, it can easily be enjoyed on its own. Really, there’s no wrong way to enjoy this recipe! Oh, and the longer it sits, the more the watermelon and cucumbers soak up all of those delicious, sweet and salty flavors of the honey vinaigrette, which makes this a dish that only gets better with time. And is there anything that could truly be better than that?
To make this salad, you’ll need watermelon, strawberries, persian cucumbers, feta cheese, fresh mint, olive oil, apple cider vinegar, dijon mustard, honey, garlic, dried oregano, kosher salt, and ground black pepper.Prepare the dressing. Add all of the dressing ingredients (the olive oil, apple cider vinegar, dijon mustard, honey, garlic, dried oregano, kosher salt, and ground black pepper) to a blender. Blend until smooth.
What You Need to Make This Easy Watermelon Salad
Watermelon: Of course, you will need the perfect watermelon in order to make this salad — in that post, I share tips for picking the perfect watermelon, without fail, every single time.
Strawberries: Strawberries add a sweetness to this salad that truly brings all of the flavors together. Don’t skip it!
Persian Cucumbers: I love using Persian cucumbers for this salad, because they are small, crunchy, and delicious. However, traditional English cucumbers also work well for this recipe- just be sure to slice them nice and thin.
Feta Cheese: Whenever you buy feta cheese, I recommend looking for the feta cheese that is packed in the brine. It’s fresher, more delicious, and has a much better flavor than pre-crumbled feta cheese.
Fresh Mint: Fresh mint adds a bright and herby flavor to this salad that truly cannot be beat.
Olive Oil: Olive oil is full of healthy fats and also has a rich and delicious flavor. It’s the perfect base for this vinaigrette!
Apple Cider Vinegar: Apple Cider vinegar is a must in this recipe. It helps to break down the tough fibers in the cabbage, which ensures that the slaw has the best texture.
Dijon Mustard: Dijon mustard is tangy and creamy, making it the perfect addition to the dressing.
Honey: Of course, it wouldn’t be a honey vinaigrette without the honey!
Garlic: I will always, always, always recommend using fresh garlic cloves in all of my dressing recipes, to ensure the best flavor, and this recipe is no exception.
Dried Oregano: Dried oregano adds the perfect flavor to balance out the sweetness of the honey. Don’t skip it!
Kosher Salt & Ground Black Pepper: A pinch of salt and pepper add the perfect flavor to the vinaigrette, and the perfect finishing touch to this recipe!
Next, build the salad. Wash and chop the watermelon, strawberries, and Persian cucumbers, and add them to a large bowl. Then, cube the feta cheese and chop the mint and add them to the bowl with the fruit.
How to Make This Light & Refreshing Summertime Salad
To make this salad, start by preparing the Honey Vinaigrette. Add all of the vinaigrette ingredients (the olive oil, apple cider vinegar, dijon mustard, honey, garlic, dried oregano, kosher salt, and ground black pepper) to a blender. Blend until the vinaigrette is completely smooth.
Taste and adjust the seasonings as needed, then set the vinaigrette aside while you prepare the salad,
Add all of the salad ingredients to a large bowl and pour the dressing on top.Toss to combine, then serve the salad immediately and enjoy! Store any leftovers in the fridge for up to three days.
