CHICKPEA PEANUT BUTTER BANANA BLONDIES - INGREDIENTS1/4 almond flour (or oat flour)⁣1 (14.5 oz) can garbanzo beans, rinsed⁣1 ripe banana⁣1/3 cup maple syrup⁣1/2 cup peanut butter⁣1/2 teaspoon baking powder⁣1/2 teaspoon baking soda⁣3/4 teaspoon cinnamon⁣3/4 cup dairy free chocolate chips⁣

Ingredients

  • ¼ cup almond flour or oat flour⁣
  • 1 14.5 oz can garbanzo beans, rinsed⁣
  • 1 ripe banana⁣
  • cup maple syrup⁣
  • ½ cup peanut butter⁣
  • ½ teaspoon baking powder⁣
  • ½ teaspoon baking soda⁣
  • ¾ teaspoon cinnamon⁣
  • ¾ cup dairy free chocolate chips⁣

Instructions

  • Preheat oven to 350.
  • Line an 8x8 baking sheet with parchment paper (spray oil so it sticks).
  • In a blender or food processor, add all the ingredients, except for the chocolate chips.
  • Blend/pulse until the batter is smooth. It should look like a creamier hummus!
  • Next, add the chocolate chips.
  • Mix and then transfer to the baking dish, using a spatula to make sure it’s even.
  • Sprinkle a few extra chocolate chips on top and bake for 20-22 minutes.
  • Make sure to let this cool before slicing, so that they don’t fall apart.
  • Store extras in the fridge.

  1. Baking time is WAYYYYY longer than reported! I left them in for 45 and they were still completely raw in the middle when I took them out :’(. Sad AF. Gonna try again tomorrow, maybe 60 min will do the trick.

    • Oh no! Every oven is different, so it sounds like you may need a longer bake time. I hope you give this recipe another shot!

  2. This is my new favorite recipe! These are SO easy to make and SO delicious! And their healthy, protein-packed ingredients make them a perfect breakfast. I have been sharing this recipe with everyone I know – it’s amazing! Thank you!!!

    Some modifications:
    – I really like bananas, so I’ve been using 2 bananas for one batch
    – My roommate is allergic to bananas, so when I made a batch for her I used pumpkin puree instead and they were delicious!
    – I like to sprinkle flaky salt on the top right before I put in the oven
    – I’ve been mixing walnuts in too and they give them a fun crunch
