Fluffy Carrot Cake Bars

FLUFFY CARROT CAKE BARS - INGREDIENTS1 box Simple Mills Banana Bread Mix2 medium carrots, grated3/4 cup raisins1/2 teaspoon cinnamon2 tablespoons oil (I recommend avocado oil)1/2 cup water3 eggs1/4 cup unsweetened shredded coconut3/4 container vanilla or cream cheese frosting of choice

Ingredients

  • 1 box Simple Mills Banana Bread Mix
  • 2 medium carrots, grated
  • ¾ cup raisins
  • ½ tsp cinnamon
  • 2 tbsp oil (I recommend avocado oil)
  • ½ cup water
  • 3 eggs
  • ¼ cup unsweetened shredded coconut
  • ¾ container vanilla or cream cheese frosting of choice

Instructions

  • Preheat oven to 325. 
  • Line and 8x8 baking dish with parchment paper or just grease well. 
  • In a large mixing bowl, whisk together the oil, water and eggs. once smooth, add the banana bread mix, carrots, raisins, and cinnamon. 
  • Transfer from mixing bowl to the baking dish. 
  • Use a spatula to make sure the batter is even. 
  • Bake for 23-24 minutes (until a toothpick comes out clean). 
  • Let cool completely before frosting—this is important. 
  • Frost the cake and evenly distributed the shredded coconut. 
  • Cut into 12 bars. 
  • Enjoy!
