Preheat oven to 325.
Line and 8x8 baking dish with parchment paper or just grease well.
In a large mixing bowl, whisk together the oil, water and eggs. once smooth, add the banana bread mix, carrots, raisins, and cinnamon.
Transfer from mixing bowl to the baking dish.
Use a spatula to make sure the batter is even.
Bake for 23-24 minutes (until a toothpick comes out clean).
Let cool completely before frosting—this is important.
Frost the cake and evenly distributed the shredded coconut.
Cut into 12 bars.
