Garlicky Lemon Gnocchi with Baby Kale

GARLICKY LEMON GNOCCHI WITH BABY KALE - INGREDIENTS1 package Trader Joe’s cauliflower gnocchi 2 cups Organic Girl baby kale3 tb olive oil (you can sub for another oil, but the flavor from olive oil is so GOOD!)2 cloves garlic, mashed2 tb lemon juicesea salt to tasteoptional red pepper flakes and parmesan cheese

I would just like to say that the day Trader Joe’s discontinues the cauliflower gnocchi is going to be a real tragic day in my household. Pretty sure I could eat it every single day for the rest of my life and not get sick of it. And it’s cheap! So when I see it, I buy it all (sorry to everyone that gets there after me)! For lunch today, I made GARLICKY LEMON GNOCCHI WITH BABY KALE, and this is super easy to make, and I think it’s one of the tastiest ways to prepare it. And as I’m sure you all know by now, you do not, under any circumstances, prepare the gnocchi according to the package instructions, or you will end up with a pile of MUSH. Follow my instructions below!

GARLICKY LEMON GNOCCHI WITH BABY KALE

Ingredients

  • 1 package Trader Joe’s cauliflower gnocchi 
  • 2 cups Organic Girl baby kale
  • 3 tbsp olive oil (you can sub for another oil, but the flavor from olive oil is so GOOD!)
  • 2 cloves garlic, mashed
  • 2 tbsp lemon juice
  • sea salt to taste
  • Optional: red pepper flakes and parmesan cheese

Instructions

  • In a medium pan over medium heat, add all 3 tb of the olive oil (more if you need to) move the pan around so the oil is evenly coated. 
  • Add the entire package of gnocchi, and don’t touch it. 
  • Let it cook for about 5-7 minutes, before flipping to the other side, for another 5-7 minutes. The gnocchi should be getting nice and brown. If they are sticking to the pan, just add a little more oil to the pan, it’s okay!
  • Once they are cooked, push the gnocchi to one side of the pan and add the baby kale, crushed garlic, lemon juice, and a pinch of salt to the pan.
  • Sauté for about 1-2 minutes, until kale is wilted, then mix everything together. 
  • Remove the pan from the heat and plate your meal. 
  • Sprinkle with red pepper flakes and parmesan cheese, if using! ENJOY!!!
