GREEK QUINOA SALAD WITH LEMON VINAIGRETTE - INGREDIENTSFOR THE SALAD:1 cup quinoa 1 red bell pepper, seeded and finely diced1/2 cup finely chopped green onion2 tb chopped fresh dill1/2 cup chopped kalamata olivesoptional: feta cheeseFOR THE VINAIGRETTE: 1/4 cup olive oil juice from 1-2 lemons (i use 2!)1-2 cloves garlic, mashed2 tsp oregano1 tsp salt1/2 tsp black pepper

Off to LA today for a whirlwind two days of eating all the samples at @natprodexpo and coming home with a suitcase full of snacks and a tummy ache. But first, GREEK QUINOA SALAD WITH LEMON VINAIGRETTE, a little savory dish for you guys to make while I’m gone!

GREEK QUINOA SALAD WITH LEMON VINAIGRETTE

Ingredients

FOR THE SALAD:

  • 1 cup quinoa
  • 1 red bell pepper, seeded and finely diced
  • 1/2 cup finely chopped green onion
  • 2 tbsp chopped fresh dill
  • 1/2 cup chopped kalamata olives
  • optional: feta cheese

FOR THE VINAIGRETTE:

  • 1/4 cup olive oil
  • juice from 1-2 lemons (i use 2!)
  • 1-2 cloves garlic, mashed
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Rinse quinoa in a strainer.
  • In a medium saucepan, add quinoa + 2 cups of water, and bring to a boil over medium heat.
  • Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
  • Remove cover from the pan, and fluff the quinoa.
  • Next, chop the bell pepper, green onion and dill, place in a large bowl.
  • Add the quinoa and mix together well.
  • Last step is to make the dressing. Whisk together the dressing ingredients. toss salad with the dressing and add salt/pepper to taste.
