One of the number one questions I get asked almost daily is “Nicole, how do you manage to eat healthy while being SO busy?!”
And truth be told, it’s hard. Between devoting myself to my family, my business, my friends, and my self-care, the days feel long, but the months feel short. If I don’t plan my meals ahead of time, it can get easy to slip into old habits of not eating until noon, or binging on something unhealthy midday. That’s why it’s really important for me to make sure that I always have something to eat on-hand, that’s not only healthy and supportive to my body, but also tastes really good.
While I love to cook (obviously!) and prepare all of my own meals, sometimes it’s just not feasible. When I’m running back and forth between business meetings and school pickups, the absolute last thing I have time to do is worry about cooking a meal. Thankfully, there’s a solution to that.
I’ve recently started incorporating Daily Harvest into my routine, and I am obsessed. I love keeping all of these items in my freezer, because I know that whenever I’m in a pinch or having a busy day, I can have a high-quality meal (or snack!) in my hands in mere minutes. One of Daily Harvest’s best collections is their bites, and I am obsessed. Think delicious protein-packed, chewy on-the-go bites, that are insanely delicious! Since I work from home, I love having ready-made snacks on hand. These bites always satisfy my sweet craving, and also make a great pre or post-workout snack. The Daily Harvest Bites come in a variety of flavors, but the Hazelnut + Chocolate are my favorite; they taste like Nutella, but so much healthier!
Because my favorite ice cream flavor is mint chip, of course I am obsessed with Daily Harvest’s Mint + Cacao Smoothie! Their smoothies (like all of their other food) come frozen, and all you have to do is add them to a blender with your liquid of choice (I love almond milk), and blend! They are so easy and so convenient, especially after a workout, when I’m in a hurry to get nutrients in my body asap!
Despite my name being Kalejunkie, I have to admit, kale isn’t my favorite food! It has to be cooked right, and it has to have lots of flavor. Thankfully, this one has both. The Kale + Sweet Potato Flatbread is made on a sweet potato crust that gets nice and crispy in the oven (it only takes 20-25 minutes to cook in the oven, that’s it!), and is topped with a delicious blend of kale and cabbage. The flatbread is delicious as-is, and is perfect to satisfy that mid-day pizza craving. And if you’re looking for more of a kick, I recommend adding some of your favorite hot sauce on top.
Brussels Sprouts + Tahini Harvest Bowl
