No Bake Lemon Bites

NO BAKE LEMON BITES - INGREDIENTSTHE BITES:2 cups almond flour4 tb coconut flour1/4 cup macadamia nuts, chopped1 lemon, juiced1 tsp vanillapinch sea salt1 scoop collagen peptides (optional)1/4 cup maple syrup4 tb coconut oil, meltedTHE ICING: (optional)1 cup powdered sugar2 tb water1 tb lemon juice

Ingredients

The Bites:

  • 2 cups almond flour
  • 4 tbsp coconut flour
  • 1/4 cup macadamia nuts, chopped
  • 1 lemond, juiced
  • 1 tsp vanilla
  • pinch sea salt
  • 1 scoop collagen peptides (optional)
  • 1/4 cup maple syrup
  • 4 tbsp coconut oil, melted

The Icing: (optional)

  • 1 cup powdered sugar
  • 1 tbsp water
  • 1 tbsp lemon juice

Instructions

  • In a small bowl, whisk together the melted coconut oil, maple syrup, vanilla and lemon juice. Set aside.
  • In a medium bowl, mix the dry ingredients.
  • Pour wet into the dry, and stir together well.
  • Use your hands (or cookie scoop) to form balls, and place them on a parchment lined tray or plate.
  • If making icing, just whisk all the ingredients in a small bowl. The mixture will be very thick.
  • Spoon a little bit on top of each bite.
  • Refrigerate for 20-30 minutes to harden.
  • Store in the refrigerator for up to one week.
