Ingredients
The Bites:
- 2 cups almond flour
- 4 tbsp coconut flour
- 1/4 cup macadamia nuts, chopped
- 1 lemond, juiced
- 1 tsp vanilla
- pinch sea salt
- 1 scoop collagen peptides (optional)
- 1/4 cup maple syrup
- 4 tbsp coconut oil, melted
The Icing: (optional)
- 1 cup powdered sugar
- 1 tbsp water
- 1 tbsp lemon juice
Instructions
- In a small bowl, whisk together the melted coconut oil, maple syrup, vanilla and lemon juice. Set aside.
- In a medium bowl, mix the dry ingredients.
- Pour wet into the dry, and stir together well.
- Use your hands (or cookie scoop) to form balls, and place them on a parchment lined tray or plate.
- If making icing, just whisk all the ingredients in a small bowl. The mixture will be very thick.
- Spoon a little bit on top of each bite.
- Refrigerate for 20-30 minutes to harden.
- Store in the refrigerator for up to one week. Enjoy!!!
