Vegan Lava Cake

VEGAN LAVA CAKE - INGREDIENTS1/4 cup oat flour⁣1/2 of a ripe banana⁣3 tablespoons almond flour⁣3 tablespoons coconut sugar⁣2 tablespoons cocoa powder⁣1/4 cup non-dairy milk (I use almond)⁣1 teaspoon apple cider vinegar⁣1/2 teaspoon vanilla extract⁣1/2 teaspoon baking powder⁣3 squares chocolate (I used 3 squares⁣ of a Hu Kitchen bar) but 3 tablespoons chocolate chips will work too⁣.

Ingredients

  • ¼ cup oat flour⁣
  • ½ of a ripe banana⁣
  • 3 tbsp almond flour⁣
  • 3 tbsp coconut sugar⁣
  • 2 tbsp cocoa powder⁣
  • ¼ cup non-dairy milk (I use almond)⁣
  • 1 tsp apple cider vinegar⁣
  • ½ tsp vanilla extract⁣
  • ½ tsp baking powder⁣
  • 3 squares chocolate (I used 3 squares⁣ of a Hu Kitchen bar) but 3 tablespoons chocolate chips will work too⁣.

Instructions

  • Preheat oven to 350. 
  • Grease a ramekin well. If you don’t have one, just use an oven safe bowl. 
  • In a food processor or blender, add all ingredients except for the chocolate squares. 
  • Pulse/ blend until smooth, about 30 seconds. Use a spatula to scrape down the sides so the batter is smooth.
  • Pour into the ramekin or bowl. 
  • Drop the chocolate squares/chips into the center. 
  • Bake for 13-15 minutes or microwave for 2-2 1/2 minutes. The top should be just set, but not fully cooked—gooey!! 
  • Remove from oven, let cool for a few minutes, and dig in!!!!!
