4fresh peaches, cut into slices (if using frozen peaches, use one 12 oz bag and you need 1 tablespoon arrowroot or corn starch or tapioca flour)
¾cupgluten free flour (or regular flour)
½cupcoconut sugar
1tspbaking powder
¼cupvegan butter or regular butter, melted
1tspsea salt
ice cream to top
Instructions
Preheat oven to 350.
Slice your peaches and add them to a deep pie dish or 8 x 8 baking dish.
Sprinkle 1/4 cup of the coconut sugar on top and give it a quick toss. NOTE, if you are using frozen peaches, toss the peaches in the arrowroot/corn starch / tapioca flour first, to prevent the peaches from getting too liquidy and creating a thick sauce, then sprinkle the coconut sugar on top.
In another bowl, add the flour, remaining 1/4 cup coconut sugar, baking powder, melted butter, and sea salt.
