Ingredients

Instructions

  • Preheat oven to 350.
  • Line baking sheet with parchment paper.
  • In a blender, add the cashews, coconut, taco seasoning, and salt. pulse until ground, but make sure to leave some texture!
  • Whisk eggs in a bowl and set aside.
  • Put coconut flour in a bowl and set aside.
  • Pour cashew mixture in a bowl and set aside.
  • Dip each piece of chicken in the 1) coconut flour, then 2) egg, then 3) roll in the cashew mixture. lay flat on baking sheet.
  • Bake 20-25 minutes until cooked through.
  • Dip in your favorite sauces! i love Primal Kitchen Foods green goddess dressing, + Sir Kensington's ketchup and ranch dressings (not whole30). The world is your oyster! enjoy these you guys!
