This Holiday Pomegranate Mimosa is a sweet and delicious twist on a traditional mimosa that is perfect for the holiday season. It’s made with a little Prosecco and the help of delicious Pomegranate ice cubes, so your drink stays cold without being watery!

Friends, when it comes to crafting the perfect holiday cocktail, I don’t mess around. Whether I’m making my Pomegranate Moscow Mules or my festive Christmas Margaritas, there are so many fun and festive ways to enjoy a cocktail around the holiday season. And if I’m being honest… this may be my most favorite holiday cocktail recipe yet.

These Holiday Pomegranate Mimosas are sweet, delicious, and a flavorful twist on the classic mimosas. While mimosas are typically made with just two ingredients- orange juice and Prosecco or champagne- these mimosas blend together the rich flavors of pomegranate, orange, and rosemary for a cozier take on the traditional drink. I love these mimosas served with brunch, or at the end of the day as a cozy nightcap. The opportunities are truly endless!

Plus, these mimosas are made my favorite way, by using my Holiday Pomegranate Ice Cubes. These ice cubes are the perfect way to keep your drinks cold without watering it down with traditional ice!

What You Need to Make These Perfect Holiday Mimosas

Would you believe me if I told you that you only need two ingredients to make these mimosas? It’s true, and hint: it’s not orange juice and Prosecco. 😉

  • Pomegranate Ice Cubes: The secret to making this cocktail truly stand out is to make these simple and easy pomegranate ice cubes! To make these cubes, you’ll need fresh cranberries, orange slices, rosemary, and pomegranate juice.
  • Prosecco: Of course, the secret to any good mimosa recipe is the Prosecco. The amount of Prosecco that you use will vary depending on how strong you’d like your mimosas to be!

How to Make These Simple & Easy Pomegranate Mimosas

Making this cocktail is so simple and easy, you’ll want to make it all the time! Simply start by preparing your pomegranate ice cubes: add the fresh cranberries, chopped oranges, fresh rosemary, and pomegranate juice to an ice cube tray and freeze until it’s solidified.

Next, divide the ice cube amongst your cocktail glasses. Finally, top off each drink with your desired amount of Prosecco, serve, and enjoy! You can use this recipe to make up to four drinks, and can store the ice cubes in the freezer for up to three months,

Instructions

  • To make this cocktail, start by preparing your pomegranate ice cubes according to this recipe: add fresh cranberries, chopped oranges, fresh rosemary, and pomegranate juice to an ice cube tray and freeze until solidified (overnight).
  • Next, divide the ice cubes amongst your cocktail glasses.
  • Top off with your desired amount of Prosecco, then serve and enjoy! This recipe makes approximately 4 cocktails.

    I introduced my stepmom to Nicole’s Instagram awhile ago and when we went over for Christmas dinner, my stepmom had these beautiful drinks ready for us. They were absolutely delicious! Definitely would recommend for the holidays or anytime really!
