It’s no secret that I enjoy baking more than cooking; it’s like my fun therapy me time in the kitchen and it’s also something i can do with Gavyn. but reality—my husband is like, “So what’s for dinner tonight?” and the truth is that half the time I’m unprepared, and scrambling to throw stuff together. Then he’s like, “You spend all this time baking, can’t you at least make more dinners and maybe fewer cookies and muffins?” NO, bruh, I can’t. Eat the damn cookies. Meet my PALEO MACADAMIA WHITE CHOCOLATE CHIP COOKIES.
Preheat oven to 350.
Line baking sheet with parchment paper.
In a small bowl, whisk together eggs, melted coconut butter, maple syrup, and coconut sugar.
In another bowl, combine coconut flour, arrowroot flour, sea salt, and baking soda. pour dry bowl ingredients into the wet bowl ingredients and combine well.
Stir in the chopped macadamia nuts and vegan white chocolate.
Bake for 10 minutes.
They might still appear soft, but they are done.
Transfer to wire cooling rack to let set and harden a little! enjoy friends!!
