Paleo Pumpkin Pie Mug Cake

ALEO PUMPKIN PIE MUG CAKE - INGREDIENTS2 tb coconut flour1 egg1/2 tsp vanilla extract1/2 tsp baking soda1 tb maple syrup2 tb coconut oil, melted2 tb pumpkin purée1 tsp pumpkin pie spice2 tb dairy free chocolate chips
PALEO PUMPKIN PIE MUG CAKE. Serving size, uno. This little number happens to be nut free, grain free, and gluten free ~ you need it when the sweet tooth hits and you want to feel festive AF. Here’s how to make it.

Ingredients

  • 2 tbsp coconut flour
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • 2 tbsp pumpkin purée
  • 1 tsp pumpkin pie spice
  • 2 tbsp dairy free chocolate chips

Instructions

  • In a small bowl, whisk together the wet ingredients.
  • Fold in the coconut flour, pumpkin pie spice, baking soda, and chocolate chips.
  • Pour contents into a mug.
  • Sprinkle a few more chocolate chips on top. microwave for 1.5 - 2 minutes.
  • WOW OPTION: Pour some cashew milk in, and wowwwwwwwww.

    I generally struggle with making my cakes. They tend to be either too egg-y or they don’t rise. Sometimes the middle is extremely mushy. However I made this tonight and it turned out perfect! The texture was just like a real cake that you bake in the oven using a typical recipe. I can’t wait to eat it again with either coconut cream or dairy free vanilla ice cream.
