Blueberry Banana Breakfast Bars

BLUEBERRY BANANA BREAKFAST BARS - INGREDIENTSone box Simple Mills banana bread mix3 eggs3 tb melted coconut oil1 cup almond milk1 tsp cinnamon1/2 cup blueberries1/4 cup coconut butter, melted2 tsp chia seeds1 tb shredded coconut2 tb cacao nibs (for some CRUNCH, not optional!)

You know you are looking for a new breakfast idea, so how about these easy AF BLUEBERRY BANANA BREAKFAST BARS?! They are topped with coconut butter, chia seeds and cacao nibs, for extra nutritional value 😆 Cut them into squares, store them in the fridge, and enjoy all week long (if they last that long, but i promise they won’t). They also happen to be gluten free + paleo friendly + vegan if you swap eggs for flax eggs. Here is the recipe!

Ingredients

  • 1 box Simple Mills banana bread mix
  • 3 eggs
  • 3 tbsp melted coconut oil
  • 1 cup almond milk
  • 1 tsp cinnamon
  • ½ cup blueberries
  • ¼ cup coconut butter, melted
  • 2 tsp chia seeds
  • 1 tbsp shredded coconut
  • 2 tbsp cacao nibs (for some CRUNCH, not optional!)

Instructions

  • Preheat oven to 350. 
  • Line an 8x8 baking dish with parchment paper. in a medium bowl, whisk together the almond milk, eggs, and melted coconut oil.
  • Add the banana bread mix. once incorporated, fold in the blueberries. 
  • Pour into baking dish. 
  • Bake for 25-30 min. 
  • Let cool for 15 min.
  • Spread melted coconut butter on top, followed by chia seeds, coconut and cacao nibs. 
  • Cut into 12 squares.
